Under the direction of Victor Robelo, the Santa Maria plantation has expanded to over 35 hectares from the 17 hectares it occupied in 2017. As part of the Grupo Las Nubes, it is one of the seven farms in the Matagalpa and Jinotega region. Nestled within La Reserva El Arenal, the coffee grows under the shade of the forest.

  • There is no right or wrong way to make coffee. However, there are coffees that are more or less suited to a particular extraction method, depending on their aromatic profiles and their roasts. Ask us for advice if you have any doubts.

  • No, absolutely not. The fridge is a humid environment, which will degrade the aromatic qualities of your coffee. You can possibly freeze it in a vacuum if it is in beans. The best way to preserve your coffee is to leave it in its original bag, away from air and light.

  • Yes, it is essential. Coffee is ground differently depending on the extraction method, and in espresso coffees from different origins will not give the same results depending on the grind. Learn how to adjust your grinder if you have one. Even an automatic machine can be adjusted, do not hesitate to ask us for advice.

  • A lighter roasted coffee will be more suitable for so-called "soft" extractions such as filters or pistons. A darker roasted coffee is more suitable for espresso machines. We give you some indications in the product sheets, but do not hesitate to contact us if you have any questions.
