Specialty coffee is a guarantee of quality and traceability. Our coffees come from specific farms and have unique aromatic characteristics linked to their terroir. They are carefully selected and roasted by hand in our workshop in Brittany for a memorable tasting experience.


Dorothée Saint-Hilaire is an SCA-certified specialty coffee roaster. The SCA promotes excellence and innovation in the specialty coffee industry. This is the assurance of compliance with superior quality standards, and of having 100% traceable coffee in your cup, having obtained a minimum score of 80/100.

Our job as specialty coffee roasters is to magnify the product and bring out the aromatic particularities that green coffee has from its origins. Roasting is gentle, at low temperatures and on

Your questions that come up often

There is no right or wrong way to make coffee. On the other hand, there are coffees more or less suited to this or that extraction method, depending on their aromatic profiles and their roasts. Ask us for advice if you have any doubts.

Yes, it is essential. Coffee is ground differently depending on the extraction method, and in espresso coffees from different origins will not give the same results depending on the grind. Learn how to adjust your grinder if you have one. Even an automatic machine can be adjusted, do not hesitate to ask us for advice.

Not at all. The fridge is a humid environment, which will degrade the aromatic qualities of your coffee. You can optionally freeze it vacuum sealed if it is in grains. The best way to store your coffee is to leave it in its original bag, protected from air and light.

A lighter roasted coffee will be more suitable for so-called “mild” extractions of the filter or piston type. Darker roasted coffee is more suitable for espresso machines. We give you instructions in the product sheets, but do not hesitate to contact us if you have any questions.
